Dirt Cake

Ingredients:

  1. 20 2-inch flowerpots
  2. 2 packages chocolate sandwich cookies
  3. 2 (3.5 ounce) packages instant vanilla pudding mix
  4. 3 1/2 cups cold skim milk
  5. 3 cups heavy cream (or a 12 ounce container of frozen whipped topping for a lighter fare)
  6. 2 cups confectioners’ sugar
  7. 2 sticks cream cheese, softened
  8. Gummy worms, bugs or flowers (optional)

Instructions:

  1. Sit 20 cookies aside then run the rest through a food processor until the crumbs resemble dirt.
  2. Wisk the vanilla pudding mix and cold milk for 5 minutes, or until set.
  3. Cream the cream cheese with the confectioners’ sugar.
  4. Combine the cream cheese mixture with the vanilla pudding.
  5. In a separate bowl, whip the heavy cream until peaks form. 
  6. Once it is set, gently fold the heavy cream in with the cream cheese and vanilla pudding mixture.
  7. Reserve 1 1/2 cups of cookie crumbs and mix the rest in with the pudding mixture.
  8. Cover the drainage hole at the bottom of each clean flowerpot with one of the sandwich cookie.
  9. Spoon your mixture in each pot about three-fourths of the way full.
  10. Top each pot with the cookie crumbs. Add gummy worms, bugs or flowers to the top.
