Garden Fresh Salsa
Mmm… salsa. Give this one a try.
3 large ripe tomatoes large diced (If not in season substitute 6 Roma tomatoes)
1 small red onion finely diced
2 seeded and minced jalapeno peppers
2 garlic cloves minced
Zest and juice of 1 lime
1 Tablespoon olive oil
2 Tablespoons chopped cilantro (or to taste)
2 Tablespoons chopped green onions
Sea salt, freshly cracked black pepper and cumin to taste
Mix all ingredients, may serve immediately, however, let the flavors meld for at least an hour. Serve with freshly fried corn tortilla chips, margaritas and/or a chilled cerveza. Also good served over grilled chicken or fish.
